Summer is just around the corner and for my family that means plenty of meals around our table on our deck. Two or three times a week we will fire up the grill and gather around the table and enjoy some family time in the great outdoors. This summer, as I continue my quest to get healthier, I’ll be looking to find healthy, delicious food to pair with some of our BBQ choices.
Last weekend we cooked up some beef and veggie burgers. I needed a couple of side dishes, and since I love coleslaw, we decided to make my favourite recipe.
I was thrilled to discover it was not only healthy and delicious, but it was also low in points (for my Weight Watcher friends), only ONE point per half cup serving. It’s always exciting when you discover something you love is low in points; it’s the small things.
The recipe is also easy peasy, especially if you buy pre-shredded cabbage, which we did. Add a couple of green onion, a few pumpkin seeds, and a little celery, Then whip up the salad dressing, and it’s ready to be devoured.
I like that this recipe covers all the bases. It’s healthy, delicious and low in points!
You will need
6-7 cups shredded cabbage (or 1 bag pre-cut cabbage)
1-2 green onions
3 tbsp. sunflower seeds
1-2 stalks diced celery (optional)
For the dressing
1 tsp. mustard
1/4 cup vinegar
1/4 cup non-fat sour cream or plain yogurt
2 tbsp. Miracle Whip or mayo
1-2 tbsp orange juice
2 tbsp. sugar
1/4 tsp. salt
1/4 tsp. pepper
dash of red pepper flakes
Stir all dressing ingredients together until well combined and pour over cabbage mixture. Stir until cabbage is lightly coated with dressing.
Summer is such a fabulous time of year and sharing food with family and friends is one of my favourite parts of this season! We love eating outside, and for some strange reason, the food always tastes better. Although summer is still a few days away, I plan on soaking it up with my family in as many ways as I can, starting with gathering around the table sharing delicious food.
