one bowl chocolate chip cookies
I have been making these One Bowl Chocolate Chip Cookies for years.
I love this recipe, first of all, because the cookies are delicious, but also because they are fuss-free. We borrowed this recipe from my best friend, Jacquie when my girls were little and I have made them hundreds of times since then. My recipe page is stained and well worn and to me, that’s always a sign of a good recipe. It’s also safe to say they are one of my girls’ favourite cookies.
When the girls were little they loved to help me bake cookies. They’d drag a chair up to the counter so they could join me. We’d break eggs, measure ingredients and steal licks from the spoon.
Now they seem to be happier coming to the kitchen to sample the treats (and licks from the spoon). But, busy schedules mean there is less time to bake, and even less time to bake together. When I do find time to pull out the baking supplies I love that it nourishes their souls and it nourishes mine to have them near me. I need to bake more!
One Bowl Chocolate Chip Cookies
1/2 cup butter (not margarine)
1/2 cup brown sugar
1/4 white sugar
1 & 1/2 tsp vanilla
1 cup flour
1/2 tsp baking soda
1 cup chocolate chips
Note: One of the things I have learned over the years is to use butter, not margarine. Using margarine, in my experience makes an unattractive flat, albeit tasty, cookie. However, butter ensures a fluffy, moist and really tasty cookie.
1. Beat butter, then add brown and white sugar (a little at a time). Beat well.
2. Add vanilla and egg.
3. Add dry ingredients. Beat.
4. Add chocolate chips
5. Drop onto cookie sheet with a spoon or a cookie scoop
Bake 12-14 minutes at 350° C
Showing up in my kitchen to create food that makes my family happy, makes me happy. We are sometimes feel short on time, but I know how important creating homemade food is to a family. It is my goal to spend more time in the kitchen nourishing my family’s bodies and souls.
