Oatmeal Chocolate Chip Cookies with Chia and Hemp Seeds
I love these Oatmeal Chocolate Chip Cookies with Chia and Hemp Seeds. Big name, great taste and they are good for you. A winning recipe by all accounts!
I have to thank my long time friend Lynette for these little bundles of nutrients. She came to visit me in the fall with an armful of beautiful flowers, big hugs, lots of love and a tin filled with these yummy cookies. I had just returned from Newfoundland a few days before from my mom’s funeral and I really needed a shoulder to cry on, and she gave me hers. Her friendship is very special to me. We met in university, and have been friends every since. It’s wonderful to have a friends to celebrate our life’s journey and necessary to help mend our hearts when it is breaking. So here you go! Enjoy!
1 1/3 cup of buckwheat flour (or spelt)
1 1/2 cup of rolled oats (I used gluten-free)
3/4 cup of coconut
1/3 cup quinoa or chia seeds (I prefer quinoa)
1/4 cup hemp seeds
1/2 cup of chocolate chips
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1 cup coconut oil
1 cup brown sugar (I used 3/4 cup)
1 tsp vanilla
Combine all dry ingredients.
In another bowl cream the coconut (I melt the coconut) and sugar together, then add egg and vanilla
Press down with a fork.
