Newfoundland Blueberry Muffins
Homemade Newfoundland Blueberry muffins are delicious and for me overflowing with memories of my childhood.
As a little girl I fondly remember being pulled from sleep to the delicious smells of muffins that my mom quietly made while I was snuggled happily beneath my blankets.
Her homemade blueberry muffins were my favourite, and she often made them, especially around blueberry season in Newfoundland. The truth is the blueberry muffins that my mom made were more like tiny cakes than a healthy muffin. Yet those yummy muffins packed a bit of a healthy punch because they were overflowing with wild blueberries. In my opinion, the fact that they were also made with cupfuls of love also made them burst with health.
My goal whenever I make muffins is to pack as much nutrition (and love) into them as I possibly can, but sometimes I lean more towards love. So when I woke up craving my mom’s homemade blueberry muffins I was excited about getting into the kitchen and searching for her recipe.
I grabbed on an old notebook where my mom had recorded a few of her favourite recipes and as I flipped through the pages I was disappointed when I didn’t find her blueberry muffin recipe there. As I was about to place the notebook back in the cupboard low and behold her recipe fell onto my counter.
Now it was my job to quietly make the muffins while my family snuggled happily beneath their blankets.
Since it’s a simple recipe I had all the ingredients except the Newfoundland Berries. I guess that’s what I get for moving to the Mainland! Thankfully I did have a large bag of frozen wild berries I bought at Costco that would have to serve as a substitute.
On this warm summer Ontario morning while the rest of my family slept I got busy making the muffins I remembered so fondly from my past.
As I poured, mixed and stirred I could feel my mom’s energy all around me!
I thought of all the mornings I lay tucked in bed while she happily baked for me. I felt a deep sense of gratitude for all the baking and all the wonderful memories I have because she found her way into the kitchen and created delicious food with a heart filled with love.
Newfoundland Blueberry Muffin Recipe
3/4 cups flour
3 tsp baking powder
1/2 tsp salt
1/4 cup butter
1/2 cup sugar
3/4 cup milk
1 tsp vanilla
1 cup blueberries
1 tbsp flour
- Preheat oven to 350 degrees Celsius
- In a large bowl put flour, baking powder, and salt. Stir together. Make a well in center.
- In another bowl cream butter and sugar. Beat in egg until smooth. Mix in milk and vanilla.
- Pour into well and stir just to moisten, batter will be lumpy.
- Stir blueberries with the flour lightly. Fold into the batter.
- Fill greased or limed muffin tins 3/4 full. Bake at 350 for 35-40 minutes or until lightly browned.
As the smell of muffins drifted through the house I couldn’t help but wonder if someday my girls will remember me baking for them. I hope that the memories of me baking will also conjure up feelings of how deeply I loved and adored them.
