I love making easy, healthy granola from scratch. There is something so satisfying about creating recipes that eliminate unneeded ingredients and additives. I think as the cooler weather arrives outside it feels wonderful to be creating something healthy, warm and yummy inside the kitchen, and the amazing smell from this granola is heavenly!
This recipe is easy to make, and I think it tastes so much better than the store-bought granola, and much cheaper, too. It takes less than an hour to make and gives me enough cereal for the week and a little to share with my best friend.
I love making recipes that I know everyone in the family enjoys and it’s great how versatile this recipe is, too. The kids like to eat it with milk. But I like to add it to yogurt in the morning. Sometimes we eat it without anything on it and other times we top it with berries or dried fruit. However, you chose to eat it it’s delicious!
Chewy Gluten Free Granola
Mix together in a large bowl
2 cups gluten free oats (rolled oats, not instant)
1/2 cup brown sugar (you can also use honey)
2 cups unsweetened coconut
1/4 cup of almond flour
1/2 -1 cup chopped nuts (pecans)
add 3/4 cup coconut oil
1/2 cup honey
1 tsp cinnamon (or less)
1 tsp vanilla
Mix together and bake on a lightly oiled 13×9 baking sheet
Bake at 350 degrees for about 30 minutes or until golden brown, stirring every 7-10 minutes to keep from burning.
(This is where I scoop a small bowl, pour some milk on and enjoy, warm out of the oven!)
Once it’s cooled down a bit, you can add some or all the following ~
1/2 cup raisins
1 cup raw sunflower seeds
1 cup dried cranberries
1 cup dried dates (chopped)
1 cup dried cherries (chopped)
1 cup dried apricots (chopped)
(store in airtight container)
