This Easy Summer Corn and Zucchini Salad is a delicious and healthy addition to any summer backyard BBQ. It’s fresh and I love that you can use veggies that are locally available at the grocery store or farmer’s markets this time of year.
We made it a few hours before dinner, but it can easily be prepared the day before and refrigerated. If you make it the day before it will taste best if you allow it to warm to room temperature before you serve it.
It didn’t take long to prepare, which is always a bonus in my eyes. A little vegetable dicing, cut the corn off the cob, sauté the veggies for a few minutes, whip up the dressing, mix it all together and voila you are done.
Easy Summer Corn and Zucchini Salad
1/2 of a large red onion
1 red pepper
1 large or 3 small zucchini
1 can lima beans (drained and rinsed)
3 ears of fresh corn or 2 cups canned or frozen corn
1/4 cup hot sauce
1/4 cup maple syrup
1/4 cup ketchup
1. Dice onion, pepper, and zucchini into small pieces.
2. If using fresh corn, cut corn off the cob and saute in 1 tsp. olive oil over medium heat for 5 minutes.
3. Add all vegetables to a large bowl and mix.
4. Then add all dressing ingredients and mix well.
Serve at room temperature. Can easily be made the day before and kept in the refrigerator, bring to room temperature before serving.
Makes 8 servings.
